Recipe 4: Fritatta of feta cheese and wild mushrooms


Fritatta of feta cheese and wild mushrooms with strained yoghurt and paprika

The ingredients for 2 people:

  • 4 eggs
  • 1 cup pureed yoghurt
  • 1 cup grated feta cheese
  • 1 cup wild mushrooms, cleaned and sliced.
  • 3-4 slices local chorizo
  • 1 teaspoon smoked paprika
  • 1 teaspoon baking pepper
  • Sea salt
  • 1 teaspoon oil



In a saucepan, whisk together the eggs, yoghurt, cheese and spices. Season with 1/4 teaspoon salt, as the cheese may already be salty.

Heat the oil in a pan, add the chorizo and mushrooms. When they are cooked through, set aside 1/3 of the mushrooms to serve - then add the eggs and cook. Season to taste and add more seasoning if needed. Serve on plates and garnish with the remaining mushrooms.
