Recipe 2: Tajine

We continue with our second HPT Gourmet Camping recipe - after the starter we move on to the "main course". We serve a tajine with chicken, lemon & porcini mushrooms.

Recipe 2: Tajine

The ingredients for 2 people:

  • 2 teaspoons sunflower or rapeseed oil
  • 1 large chicken breast (or 2 small ones)
  • Zest and juice of 1/2 lemon
  • Two handfuls of porcini or other fleshy wood mushrooms
  • 1 cup yoghurt
  • 2 cups water
  • 1 chicken stock cube
  • Sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander powder
  • 1 teaspoon allspice d'Espelette

Preparation:

Heat 1 teaspoon of oil in a frying pan and fry the chicken and lemon zest until the chicken is cooked through and slightly caramelised on the outside
. Remove and set aside.

Add the remaining oil, put over medium heat and sauté the mushrooms.
Place in a saucepan, then add the spices, water, stock cube and lemon zest, bring to the boil and then reduce to a simmer.

 Simmer for 10 minutes, taste and season if necessary, add the yoghurt and chicken pieces and simmer for another 2 minutes.

And the main course is ready to serve - bowls are best. Have fun cooking it!
