Recipe 1: Wild mushroom soup
Here we go with the first recipe from the NEW series: HPT Gourmet Camping.
As you know from a good restaurant visit, we also start with a soup made from mushrooms we have collected ourselves.
The ingredients for 2 people:
- 2 teaspoons rapeseed oil
- 3 cups wild mushrooms (cleaned and sliced)
- 1 cup wine
- 1 cup cream
- Sea salt
- 1 teaspoon black pepper
- 1 teaspoon nutmeg
Preparation:
- Heat the oil in a saucepan
- Add the mushrooms and season
- Add the wine, the cream and the spices
- Simmer for 10-15 minutes, season to taste and add more seasoning if necessary.
- Tip: serve with a good crusty bread
